Abstract
La realización de esta investigación permitió caracterizar los procesos de cocción y pos consumo del aceite residual generado por los restaurantes de Bucaramanga, inicialmente se elaboró una base de datos con los restaurantes participantes en la investigación, luego se realizó la caracterización de los procesos de cocción y pos consumo de aceite residual, teniendo en cuanta las variables que afectaban directamente los dos procesos y se aplicó la técnica de análisis de clúster, finalmente se realizó un diagnóstico de riesgos percibido por los usuarios. Se evidenció que aproximadamente el 60% de los establecimiento encuestados cumplen con las características necesarias para que el aceite residual sea óptimo para la producción de biodiesel y surgió la necesidad de concienciar al resto de la población a cambiar ciertas costumbres y hacer nuevas implementaciones.
Abstract
The realization of this investigation allowed to characterize the cooking and post-consumption processes of the residual oil generated by the restaurants of Bucaramanga, initially a database was elaborated with the restaurants participating in the investigation, then the characterization of the cooking processes and post residual oil consumption, taking into account the variables that directly affected the two processes and the cluster analysis technique was applied; finally, a risk diagnosis was made by the users. It was evidenced that approximately 60% of the surveyed establishments fulfill the necessary characteristics so that the residual oil is optimal for the production of biodiesel and the need arose to make the rest of the population aware of changing certain customs and making new implementations.
