Este artículo presenta un análisis cualitativo de la alimentación en el municipio de Túquerres; su objetivo es interpretar las percepciones sobre la disponibilidad, el acceso y el consumo de tubérculos andinos en hogares del área urbana y rural. La investigación se realizó mediante la etnografía enfocada, utilizando técnicas como la entrevista a profundidad, los grupos focales y la observación. Los resultados mostraron que en la alimentación de las familias convergen patrones de consumo alimentario tradicional y moderno, donde los niños y los adolescentes se están alejando de las costumbres alimentarias tradicionales por factores relacionados con el uso de complementos nutricionales, la predilección por alimentos empaquetados y las comidas rápidas. Por otro lado, los tubérculos andinos cumplen aún una función relevante en la alimentación cotidiana y festiva de las familias, identificándose como alimentos que se relacionan con el bienestar y la salud. A manera de conclusión, es de suma importancia conservar las tradiciones alimentarias de los habitantes de este municipio, ya que representan los saberes culinarios que se han construido a través de los años, formando parte de su identidad. Además, en la actualidad se ha evidenciado que las prácticas alimentarias modernas pueden generar enfermedades crónicas no transmisibles.
This article presents a qualitative analysis of food in the municipality of Túquerres; its objective is to interpret the perceptions availability, access, and consumption of andean tubers in households of urban and rural areas. The research was conducted through focused ethnography using techniques such as in-depth interviews, focus groups, and observation. The results showed that traditional and modern food consumption patterns converge in the diet of families, children and adolescents are moving away from traditional food habits due to factors related to the use of nutritional supplements, the predilection for packaged foods, and fast food. On the other hand, Andean tubers still play a relevant role in the daily and festive diet of families, identifying that they are foods related to well-being and health. By way of conclusion, it is of utmost importance to preserve the food traditions of the inhabitants of this municipality, since they represent the culinary knowledge that has been built over the years, forming part of their identity. In addition, it has been shown that modern food practices can generate chronic non-communicable diseases.
