Resumen
Actualmente el aceite de aguacate está tomando fuerza en el mercado nacional e internacional, gracias a sus múltiples beneficios y variedades de uso del mismo, que van desde la industria cosmética hasta la industria alimentaria. Gracias a su aporte nutritivo, el aceite de aguacate se considera un alimento antioxidante y ayuda a mejorar el sistema cardiovascular; así mismo, su alto contenido de agua, vitaminas y minerales contribuyen a la hidratación de la piel y el cabello.
Sin embargo, el aceite de aguacate es un producto relativamente nuevo en el mercado, en donde se emplean diferentes métodos de extracción de este producto, lo cual influye directamente en la calidad del mismo y determina si es apto para el consumo. Por tal razón, el presente proyecto tiene como objetivo analizar de manera técnica y financiera la obtención de este producto mediante el método de hidrocavitación, dicho estudio se realizaría en el Valle de Tenza – Boyacá. Para cumplir previo objetivo se realizaron tres tipos de estudios: estudio de mercado, estudio técnico y estudio financiero.
El estudio de mercado permitió determinar la disponibilidad de aguacate en el territorio nacional de aproximadamente 661.237 toneladas, donde aproximadamente el 34% de la producción total le pertenece a la variedad Hass y siendo el Valle de Tenza la zona de influencia del estudio se le atribuye el 3% de la producción total de aguacate en el país. Adicionalmente se realizó el análisis de oferta y demanda del producto con el fin de examinar la competencia, su impacto en los consumidores y los posibles precios de venta del aceite de aguacate.
El estudio técnico permitió determinar la infraestructura, equipos, mano de obra y recursos necesarios para la extracción y elaboración del aceite de aguacate y así mismo su distribución y ubicación de la planta.
El estudio financiero abarco el análisis de los costos asociados a las variables económicas que afectan directamente la constitución de la empresa y su medio de financiación, por lo que se establece un financiamiento por préstamo bancario. Finalmente se determina que el proyecto es viable.

Abstract
Avocado oil is currently gaining strength in the national and international market, thanks to its multiple benefits and varieties of use, ranging from the cosmetic industry to the food industry. Thanks to its nutritional contribution, avocado oil is considered an antioxidant food and helps to improve the cardiovascular system; Likewise, its high content of water, vitamins and minerals contribute to the hydration of the skin and hair.
However, avocado oil is a relatively new product on the market, where different methods of extraction of this product are used, which directly influences its quality and determines whether it is suitable for consumption. For this reason, the objective of this project is to analyze technically and financially the obtaining of this product through the hydrocavitation method, said study would be carried out in the Tenza Valley - Boyacá. To meet the previous objective, three types of studies were carried out: market study, technical study and financial study.
The market study made it possible to determine the availability of avocado in the national territory of approximately 661,237 tons, where approximately 34% of the total production belongs to the Hass variety and being the Tenza Valley the area of influence of the study, it is attributed the 3% of the total avocado production in the country. Additionally, the supply and demand analysis of the product was carried out in order to examine the competition, its impact on consumers and the possible sale prices of avocado oil.
The technical study allowed to determine the infrastructure, equipment, labor and resources necessary for the extraction and processing of avocado oil and likewise its distribution and location of the plant.
The financial study covered the analysis of the costs associated with the economic variables that directly affect the constitution of the company and its means of financing, for which a financing by bank loan is established. Finally, it is determined that the project is viable.
