| dc.description | El enfoque One Health en la producción de leche busca integrar la salud animal, humana y ambiental para garantizar sistemas productivos sostenibles y seguros. Este documento aborda conceptos clave de One Health, sus objetivos en la lechería y la importancia de prácticas saludables. Se destacan indicadores de salud animal, manejo adecuado de animales y estrategias para prevenir enfermedades zoonóticas. En salud humana, se presentan prácticas recomendadas y beneficios para los trabajadores, resaltando la higiene en la manipulación de productos lácteos y el bienestar laboral. También se discuten la importancia de la nutrición, el suministro de dietas balanceadas y el control de la calidad del forraje y el agua como pilares para mejorar la producción. El uso responsable de medicamentos veterinarios, incluyendo antibióticos y el respeto a normativas, refuerza la inocuidad del producto. Asimismo, se examina la gestión ambiental, con prácticas sostenibles y beneficios asociados, como la reducción de desechos y la protección de los ecosistemas. Finalmente, se abordan aspectos clave como la calidad y seguridad alimentaria, las buenas prácticas agrícolas y pecuarias, y un manejo integral en el ordeño, desde la preparación del animal hasta el post-ordeño, garantizando leche de alta calidad y trazabilidad en toda la cadena de valor. | |
| dc.description.abstract | The One Health approach in milk production seeks to integrate animal, human and environmental health to guarantee sustainable and safe production systems. This document addresses key concepts of One Health, its objectives in the dairy and the importance of healthy practices. Indicators of animal health, proper animal management and strategies to prevent zoonotic diseases are highlighted. In human health, recommended practices and benefits for workers are presented, highlighting hygiene in the handling of dairy products and occupational well-being. The importance of nutrition, the provision of balanced diets and the control of the quality of forage and water as pillars to improve production are also discussed. The responsible use of veterinary medicines, including antibiotics and compliance with regulations, reinforces the safety of the product. Likewise, environmental management is examined, with sustainable practices and associated benefits, such as waste reduction and protection of ecosystems. Finally, key aspects are addressed such as food quality and safety, good agricultural and livestock practices, and comprehensive management in milking, from the preparation of the animal to post-milking, guaranteeing high quality milk and traceability throughout the chain. . of value. | |
